Abstract: Long-term type II diabetes can lead to numerous biological complications, such as hypertension and cardio-vascular disease. The key enzymes involve in the enzymatic breakdown of complex carbohydrates, pancreatic a-amylase and intestinal a-glucosidase. This study aimed to access the inhibitory activities of phenolic-rich extracts from 3 beans as red kidney bean; Phasecolus vulgaris, mung bean; Vigna radiate and soybean; Glycine max on a-glucosidase activities. The beans have been germinated and fermented with Bacillus subtilis, Lactobacil/us plantarum and Lactococcus lactis. The free phenolic extract of the 3 beans were obtained by extraction with 80% ethanol, while that of the bound phenolic extract was done by extracting the alkaline and acid hydrolysed residue with ethyl acetate. The inhibitory action of these extracts on the enzyme activities as well as their antioxidant properties was assessed. The free or bound phenolic-rich extracts could inhibit a-glucosidase in a dose independent pattern. However, the free phenolic extracts had the high a-glucosidase inhibitory activity (p:c:0.05). Furthermore, the enzyme inhibitory activities of the phenolic-rich extracts were not associated with their phenolic content. Phenolic-rich extracts of 3 beans could inhibit key enzyme link to type II diabetes and thus could explain in particular mechanism by which 3 beans rendered these health promoting effects. The results indicated that Bacillus subtilis could generate certain a- glucosidase inhibitor from 3 germinated fermented beans more effectively than Lactobacillus plantarum and Lactococcus lactis. However, glycemic index (GI) in this study was confirmed the effective with phenolic compound and a-glucosidase inhibitor.
